Lentil and Chickpea Ragu with Curry Paste. Ingredi

Lentil and Chickpea Ragu with Curry Paste.
Ingredients:
- 1 shallots onion, chopped
- 2 carrots, diced
- 1 celery root, diced
- 1 can of tomato pelati
- 3 cloves of garlic, minced
- 1 cup of red lentils
- 1 cup of cooked chickpeas
- 2 tablespoons of curry paste
- Fresh coriander for garnish
Instructions:
1. Heat some olive oil in a large pot over medium heat. Add the chopped red onion and cook until softened.
2. Add the diced carrots and celery root to the pot and cook for a few minutes until they start to soften.
3. Add the minced garlic and cook for another minute until fragrant.
4. Pour in the can of tomato pelati and stir well to combine with the vegetables.
5. Add the red lentils and cooked chickpeas to the pot. Stir in the curry paste and mix everything together.
6. Add 500 ml of water or vegetable broth and Bring the mixture to a simmer and let it cook for about 20-25 minutes, or until the lentils are tender and the sauce has thickened.
7. Taste and adjust the seasonings as needed. You can add salt, pepper, or more curry paste for additional flavor.
8. Serve the Lentil and Chickpea Ragu over cooked rice or pasta, and garnish with fresh coriander.

Sous-vide Leeks with Smoked Eel on Eel Cream and almond plates

1. Cut the stalks of leeks to about 15cm and vacuum pack them with the eel tale, olive oil and a little salt.
2. Sous-vide the leeks at 65°C for 25 minutes.Remove the leeks from the vacuum bag and cut them into clean portions already thinking about the presentation of the plaque.
3. Add a little oil and butter to a pan and fry the leek pieces until lightly coloured. Leave them with a pat of butter on top until covered.
Eel cream
200 g Eel
30 g Butter
100 ml Egg yolk
100 ml Cream
0.5 tbsp Garlic powder
12 g Tomato powder
1. Clean the eel, removing the skin and bone. A small portion of the eel fillets will be reserved for the final plating. Cut the remaining part into smaller pieces.
2. Add all the ingredients to a blender cup and mix until you obtain a fine and silky texture. Strain the cream and place it in a piping bag with a fine nozzle.

Plating preparation
Lightly caramelize the leeks with a blow torch.
Add the eel cream to the dish.
Plate the caramelized leek and place a few pieces of smoked eel fillet on top.
Put a few peaces of picked chilly
Shaved plates of almonds on the plate as garnish.
Finish the dish with flowers or microgreens of your choice.

Зелені Тальятелле з пастою з зеленої спаржі у вершковому соусі з горганзолою:

Інгредієнти:
- 250 г Тальятелле
- 200 г зеленої спаржі
- 100 г горганзоли
- 2 столові ложки оливкової олії

4. Додайте верхівки зеленої спаржи і обсмажте її протягом 3-4 хвилин, поки спаржа не стане ніжною.
5. Додайте смужки стебла та ще обсмажте ще 1 хвилину.
6. Додати вершки й горганзолу до спаржі та часнику. Постійно помішуйте, поки сир повністю не розтане і соус не стане гладким.
7. Додайте сіль і перець за смаком.
8. Після того, як паста готова, відкиньте її на друшляк, але залиште невелику кількість води.
9. Додайте пасту до соусу з горганзолою та спаржею. Добре перемішайте, додаючи невелику кількість збереженої води з пасти, якщо соус здається занадто густим.
10. Подавайте гарячу пасту з пастою з зеленої спаржі у соусі з горганзолою. Прикрасьте свіжою зеленню або тертим пармезаном за бажанням.

**Інгредієнти (на 4 особи):**
- 500 г спаржі
- 30 г борошна
- 60 г вершкового масла
- 125 г збитих вершків
- 150 г креветок
- Сіль, кайенський перець, мускатний горіх
- 1-2 ст.л лимонного соку
- Кервель

**Приготування:**
1. Очистити спаржу, відрізати кінчики. Залити 1л води, довести до кипіння, варити 1 хвилину, настояти 10 хвилин. Вийняти шкірку та кінці, нарізати спаржу на шматочки 3-4 см.
2. Варити спаржу в бульйоні 5 хвилин, охолодити під холодною водою.
3. Довести бульйон до кипіння. Змішати борошно з 30 г масла, вмішати в бульйон. Варити 3 хвилини, додати вершки, тушкувати 3-5 хвилин до загустіння.
4. Розтопити залишок масла, обсмажити спаржу 3 хвилини, додати креветки, смажити 2 хвилини, приправити.
5. Приправити суп, пюрирувати, подавати зі спаржею та креветками, посипати кервелем.

**Час:** 45 хвилин

Цей рецепт гарантує багатий і ароматний суп з цілісними шматками спаржі та креветок, обволіканих ніжним вершковим соусом.

Steamed gyoza with chicken filling and turkey hearts:
Ingredients:
- 100 g chicken mince
- 100 g turkey hearts
- 1 1/2 tablespoons soy sauce
- 1/2 tablespoon fish sauce
- 1/2 tablespoon sesame oil
- 1 clove of garlic, finely chopped
- 1/2 teaspoon fresh ginger, grated
- 200 g flour
- 2 tablespoons cornstarch
- 165 g hot water
- Salt and pepper to taste
- Fresh herbs for garnish
Instructions:
Dough:
1. Mix the flour, cornstarch, and salt. Add hot water and mix well.
2. Let the dough rest in plastic wrap for 20 minutes.
Filling:
1. Mix the chicken mince.
2. Beat the boiled turkey hearts.
3. Add soy sauce, fish sauce, sesame oil, garlic, ginger, salt, and pepper to both types of filling. Mix well.
Assembly:
1. Roll out the dough and cut out circles.
2. Shape small balls of the filling and place them in the center of each dough circle. Fold and seal the edges.
3. Place a steamer on the stove and heat it.
4. Arrange the dumplings in the steamer.
5. Cover the steamer and steam the gyoza for 20 minutes.
6. Garnish the dumplings with fresh herbs.

Тогерек або кримско-татарскький янтик.
тісто:
50 мл води
90 г борошна
3 г або 1 ч. л. солі
1/2 ч. л. олії
фарш:
200 г цибулі
150 г яловичого фаршу
сіль за смаком

Як готувати: змішати борошно, воду, сіль та олію. замінити тісто, загорнути у плівку, залишити на 10-20 хв.

нарізати дрібно цибулю добавити у фарш, посолити поперчити.

розкачати тісто 2 мм, тарілкою відмітити коло, у середину накласти начинку, накрити другим листом тіста та вирізати по краях тарілки коло.

смажити на сухій пательні перегортаючи декілька разів.

Готовий виріб змастити маслом з обох боків

Tart with Prickly pear cream and pieces of persimm

Tart with Prickly pear cream and pieces of persimmon and pumpkin custard.

Тарт з кремю з опунціі та шматочками хурми та гарбузовий заварний крем.

150 гр вершкового масла мішуємо з 90 гр цукрової пудри. Розмішуємо до однорідності, додаємо 1 яєце. Додаємо 2 гр солі, 300 гр борошна. Гарно вимішуємо.

Розкатуємо тісто між 2 листами пергаментного паперу до товщини 2-3 мм. Ставимо тісто у холодильник на 30-50 хв. На протвінь кладемо силіконовий перфорований коврик, на нього форму- кільце, та моделюємо тарт із тіста. Перед випіканням Ставимо форму в холодильник на 15-20 хвилин.
Випікаємо при 170°С 15 хвилин.

Чистимо опунцію 350г, провадимо 1 хвилину в сотейнику. Протираємо через сито. Ставимо на плиту протерту масу доложимо 10 гр борошна та 30 гр масла, 50 гр кубків хурми, провалюємо 3-4 хв. У кінці додаємо 40 гр желатинові маси. Залишити охолоджуватися.
Ріжемо 200 гр гарбуза. Прогріваємо зернята кардамону та пів палички кориці на сухій пательні, до аромату, додаємо 15 гр вершкового масла та гарбуз. Посипати 15 цукру та додати 30 мл води. Накрити кришкою та тушкувати до мʼякості гарбуза. Перебиваємо гарбуз блендером.
Заварюємо крем, для цього змішуємо 1 яйце, 50 гр цукру та 30 гр борошно, додаємо 150 мл молока. Ставимо на маленький вогонь та постійно помішуємо, додаємо пюре гарбуза та загущюємо крем. Знімаємо з плити додаємо 40 гр вершкового масла і ретельно перемішуємо.
Збираємо тарт. Заливаємо охолоджений крем опунції на дно тарта. Якщо крем стабілізувався розбиваємо вінчиком. Зверху виливаємо охолоджений до кімнатної температури заварний гарбузовий крем. Ставимо у холодильник тарт на 2-3 години.
